Southern Style Okra3 slices bacon Fry bacon. When crisp, drain on paper towel. Sauté okra in hot fat to seal edges. Add onion and celery. Sauté until onion is transparent — not brown. Add tomatoes, peppers, salt and pepper. Cook 3 to 5 minutes. Add corn; simmer 20 minutes. Serve hot or cold. Just before serving, crumble bacon on top. Makes 6 to 8 servings. |
